Bran-Apple Muffins
Prep Time: 30 minutes. Bake Time: 25 minutes. Servings: 12 muffins
Ingredients:

1.5 cups oat bran
1 cup milk + 1 tablespoon lemon juice
1/2 cup no sugar added applesauce
1 egg
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup peeled and chopped apple
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1 tablespoon ground flax seed
Directions:
(1) In a small bowl, add the lemon juice to the milk and let sit for about 10 minutes...this will yield a cup of buttermilk!
(2) In another bowl, add the oat bran and buttermilk together. Stir, and let sit for 10 minutes or until the bran soaks up all the liquid.
(3) In yet another bowl, mix together the applesauce, egg, brown sugar and vanilla. Add it to the oat bran/buttermilk bowl.
(4) Add the rest of the ingredients to the bowl and mix well!
* You can omit, add, increase, decrease the amount and type of spices to your liking.
(5) Preheat the oven to 375 degrees and grease a muffin pan.
(6) Fill up the muffin pan with the batter; sprinkle some oatmeal on top of each.
(7) Bake for 20-25 minutes or until the batter is set to your liking.
